Black Soybean Bean & Cheese Quesadilla - Serves 10 as a snack

Ingredients:

  • 1 Can Soybeans, Black ++
  • 3oz Water
  • 1/4 cup Cilantro -- finely chopped
  • 10 Wraps Tortilla, Mama Lupe++
  • 1/4 cup Sour Cream
  • 1/4 cup Salsa
  • 2 tbsp Oil -- for frying the refried beans and the tortillas
  • 1 tsp Garlic Powder
  • 10 oz Cheese, Monterey -- shredded

++ Mama Lupes tortillas and black soy beans are available online and in-store at The Low Carb Grocery.



Instructions

Drain can of black soybeans to make the refried beans.

Put black soybeans in food processor, add about 3 oz of water and garlic powder and run food processor until beans form a smooth paste. You may have to add more water. Remove bean paste from food processor bowl.

Heat frying pan and add 1 tbsp of oil. Add bean paste to frying pan and cook for a couple of minutes til hot through. Remove refried beans from the frying pan and stir in chopped cilantro.

Divide refried beans into 5 portions. Spread first tortilla with refried beans, top with 1/5th of the cheese. Put 2nd tortilla on top. Repeat with remaining tortillas.

Heat frying pan, add remaining tbsp of oil. Fry filled tortillas on both sides and then slice and serve with sour cream and salsa. Serve warm. You can keep the fried tortillas warm in the oven til you are ready to slice and serve them.
