1/3 cup heavy cream
1-1/4 cups water
2 large eggs
Makes 16 pancakes (5"-6" each)
In medium/large size mixing bowl, combine 2 eggs and wisk until yellow and slighly foamy (1/2 minute).
Add dry mix, 1/3 cup cream, and 1-1/4 cups water. Whisk for 1 minute, until well blended.
Spray the griddle or hot pan with non-stick cooking oil, pour 1/4 cup of the prepared batter into pan. Cook for just 30 seconds, and using a spatula, gently lift the pancakes edge to be sure it is browned. Turn the pancak and cook for just another 20 seconds.
Calorie Reduced Alternative (a.k.a super delicious low calorie pancakes): (The following alternative was suggested by one of our customers, Dr. Austin)
Use a blender to combine 100g (roughly 1/2 cup) of egg whites and, optionally, add 1 tablespoon of milk. Add 1 heaping tablespoon of mix (25g) and stir for 1-2 servings. Resulting mix a pancake which is both low calorie and low carb.
